Ingredients
  

  • For the Chicken
  • - 1 lb boneless skinless chicken breast or thighs, cut into bite-sized pieces
  • - 2 tbsp olive oil
  • - 2 tbsp lemon juice
  • - 2 cloves garlic minced
  • - 1 tsp dried oregano
  • - Salt and pepper to taste
  • For the Vegetables
  • - 1 red bell pepper sliced
  • - 1 yellow bell pepper sliced
  • - 1 zucchini chopped
  • - 1/2 red onion sliced
  • - 1 cup cherry tomatoes halved
  • - 1/2 cup Kalamata olives pitted and halved
  • For the Sauce
  • - 2 tbsp soy sauce
  • - 1 tbsp honey
  • - 1 tsp sesame oil
  • - 1 tsp rice vinegar
  • For Garnish
  • - 1/4 cup fresh parsley chopped

Instructions
 

  • Instructions:
  • Marinate the Chicken: In a bowl, mix olive oil, lemon juice, garlic, oregano, salt, and pepper. Add the chicken and marinate for at least 30 minutes.
  • Prepare the Vegetables: Chop all vegetables into similar-sized pieces.
  • Stir-Fry the Chicken: Heat a wok over high heat. Add marinated chicken and cook until golden brown. Remove from wok.
  • Cook Vegetables: Stir-fry bell peppers, zucchini, and onions for 3-5 minutes. Add cherry tomatoes and olives, stir-frying for another minute.
  • Add Sauce: Return chicken to the wok, pour in the sauce, and stir-fry for another 2 minutes until everything is evenly coated.
  • Garnish & Serve: Sprinkle with fresh parsley and serve immediately.

Notes

- Serve over quinoa, brown rice, or couscous for a complete meal.
- For a low-carb option, serve over cauliflower rice or in lettuce wraps.
- Add a pinch of red pepper flakes for a spicy kick.
