In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
In another bowl, mix milk, egg, melted butter, and vanilla extract.
Gradually combine the wet and dry ingredients, stirring until smooth. Do not overmix.
Heat a non-stick skillet over medium heat and lightly grease with butter or oil.
Using a squeeze bottle or spoon, drop small dollops of batter onto the skillet.
Cook for 1-2 minutes until bubbles form on the surface, then flip and cook another 1 minute until golden brown.
Notes
These mini pancakes can be served with syrup, fruit, chocolate sauce, or turned into pancake skewers. Freeze extras and reheat in a toaster or microwave!
