Ingredients
  

Pancake Batter

  • 1 cup all-purpose flour
  • 2 tbsp sugar optional for sweetness
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 1 pinch salt
  • 0.75 cup milk dairy or plant-based
  • 1 large egg
  • 2 tbsp melted butter or oil
  • 1 tsp vanilla extract optional

Instructions
 

  • In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, mix milk, egg, melted butter, and vanilla extract.
  • Gradually combine the wet and dry ingredients, stirring until smooth. Do not overmix.
  • Heat a non-stick skillet over medium heat and lightly grease with butter or oil.
  • Using a squeeze bottle or spoon, drop small dollops of batter onto the skillet.
  • Cook for 1-2 minutes until bubbles form on the surface, then flip and cook another 1 minute until golden brown.

Notes

These mini pancakes can be served with syrup, fruit, chocolate sauce, or turned into pancake skewers. Freeze extras and reheat in a toaster or microwave!
