Ingredients
- 2 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- ½ cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 ½ cups Rice Krispies cereal
- 1 ½ cups chocolate chips
Instructions
Step 1: Preheat the Oven & Prepare Baking Sheet
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking.
Step 2: Mix Dry Ingredients
In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
Step 3: Cream Butter and Sugars
In a large bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy. This takes about 2–3 minutes with a hand mixer.
Step 4: Add Eggs and Vanilla Extract
Beat in the eggs one at a time, mixing well after each addition. Add vanilla extract and mix until fully combined.
Step 5: Combine Wet and Dry Ingredients
Gradually add the dry ingredient mixture into the wet mixture. Stir on low speed or mix gently by hand until just combined—avoid overmixing.
Step 6: Fold in Rice Krispies & Chocolate Chips
Using a spatula, gently fold in the Rice Krispies and chocolate chips until evenly distributed. Be careful not to crush the Rice Krispies.
Step 7: Portion & Shape the Dough
Scoop the dough into 1 ½-inch balls and place them 2 inches apart on the prepared baking sheet.
Step 8: Bake to Perfection
Bake for 10–12 minutes, or until the edges turn golden brown. The centers may look slightly underbaked—this is fine as they will set while cooling.
Step 9: Cool & Enjoy
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Enjoy warm or store for later!
